This totally satisfies my cravings for Asian vegetable dishes, it's all the flavour and texture of a cooked version but with all the goodness of raw!
Marinated veggies in an Asian sauce, served on savoy cabbage leaves.
Julienned Veggies
bean sprouts, carrots, mushrooms, cilantro, green cabbage, scallions
Marinade (blend or process)
1 tbsp of sesame oil
juice of one small/medium orange
1.5 - 2 tbsp of tamari
4 dates
cayenne to taste
a few sprinkles of ginger powder or grated fresh - to taste
1 tbsp of sesame paste
1/4 tsp of garlic
Combine the ingredients well and let the veggies sit in the marinade for at least 10 minutes. They will reduce in size and soften but remain crunchy.
Garnish with avocado and serve on a savoy cabbage leaf, roll and enjoy!
Tips:
add raw cashews and serve as a veggie dish without the wraps.
